Busy Day Cake


A rather confusing and incomplete recipe for "Busy Day Cake" -

Sift 3 cups Swans Down cake flour, 4 teaspoons Calumet baking powder, 1/4 t. salt, 2 cups sugar three times.

10 t. melted butter a little cool
4 eggs fill cup with milk then add 1 cup more milk
1 t. vanilla

Put all together abd beat three minutes, bake in 3 layers 25 minutes

Jambalaya

Clipped recipe for jambalaya:

1 cup ham cut in strips
1 cup chopped onion
1/2 cup green pepper cut in squares
1 medium clove garlic, minced
2 tablespoons salad oil
1 can (10 3/4 ounces) condensed tomato soup
2 cups water
2/3 cup raw rice
1 medium bay leaf
Dash Tabasco sauce
1 cup cooked shrimp
Chopped parsley

In a large skillet, brown ham and cook onion, green pepper, and garlic in oil until vegetables are tender. Add remaining ingredients except shrimp and parsley. Bring to a boil. Cover; cool over low heat 20 minutes. Stir now and then. Stir in the shrimp; cook 5 minutes more or until rice is tender. Garnish with parsley. 4 servings.

Cheese Cake

Recipe for cheese cake:

II)

1 lb cottage cheese
3 egg yolks
3 tbs. flour
1 c. sugar
pinch salt
1/2 c. milk

Beat egg whites until stiff fold into batter

Bottom:

I)

1/2 c. butter or crisco and cream with 1/3 c. sugar, 1 egg and 1 cup flour, 1 t. vanilla.

Pour batter in and bake 350 degrees 45 min until done (shake, if solid it is done)

Starlight Mint Surprise Cookies

Recipe for "Starlight Mint Surprise Cookies" -

Bake 375 degrees 10-12 minutes
Makes 4 1/2 dozen

Sift:

3 c flour
1 t soda
1/2 t salt

Cream:

1 c butter
1 c sugar
1/2 c brown sugar

Blend in:

2 eggs
2 T water

Peanut Butter Mounds


Recipe for Peanut Butter Mounds:

1 1/4 c. flour
1/4 tsp. baking soda
1/4 tsp. salt
1/4 c. margarine
1/2 c. peanut butter
1/2 c. packed brown sugar
1/2 c. sugar
1 egg

Roll into ball size of walnuts.

Place on cookie sheet (greased)

Flatten with fork. Top each cookie with corn flake topping.

Bake 375 degrees - 10-12 min.

Cornflake Topping

1/4 c. margarine
1/3 c. sugar
1 egg
3 c. cornflakes
1/2 c. chopped peanuts
3 tbl. chopped maraschino cherries
1/2 tsp. vanilla

Condensed Milk Salad Dressing



Recipe for "Nanna's Condensed Milk Salad Dressing"

Beat one egg until thick

Add 1 tsp. dry mustard, 1 T salt, 1/4 tsp. pepp. 1/2 tsp. paprika.

Now add 3/4 c vinegar, 1 can condensed milk and 1/4 c melted olea.

Beat - do not cook

Butterscotch Yule Log

Recipe for Butterscotch Yule Log:

1 6 oz package butterscotch morsels (1 cup)
1/3 cup sweetened condensed milk
1/2 teaspoon vanilla
1/3 cup pecans, chopped
Slightly beaten egg white
Pecan halves

Melt over hot (not boiling) water. Remove from water, stir in milk and vanilla, add chopped pecans, mix well.

Form in 12 inch roll on waxed paper and roll tightly in waxed paper to shape evenly.

Unroll and mark surface length with tines of fork, brush with egg white.

Press pecan halves into roll to cover surface.

Wrap in waxed paper, chill.

Cut in 1/2 inch slices with sharp knife.

Brown Sugar Cookies

Recipe for brown sugar cookies:

2 cups brown sugar
1 cup shortening
1/2 tea. salt
1 tea. flavoring
2 eggs
1 cup sour milk
1/2 tea. soda
3 1/2 cups flour
2 tea B.P.

No other instructions.

Mince Meat Cookies

Recipe for mince meat cookies. Enjoy:

3 1/4 cups sifted flour
1/2 tablespoon salt
1 teaspoon soda
1 cup shortening
1 1/2 cups sugar
3 eggs, well beaten
1 package None Such mince meat

Sift flour, salt and soda.

Cream shortening, add sugar gradually.

Add eggs, beat until smooth.

Add mince meat broken in small pieces.

Add flour and mix well.

Drop by teaspoonful on greased baking sheet.

Bake in oven 400 degrees - 12 mins

Chocolate Oatmeal Cookies

Recipe for chocolate oatmeal cookies:

2 cups sugar
1 stick margarine - 1/2 cup
1/2 cup milk

Boil 3 minutes

In a bowl, put:

3 cups quick oats
4 tbsp cocoa
1/2 cup coconut
1/2 cup nut meats

Pour boil mix over and mix. Drop by tsp on waxed paper

(note: the wonderful Stephanie points out that this is a no-bake recipe. I should have known better)
