Maple Sugar


Recipe for making maple sugar:

Heat maple syrup to 238° F on candy thermometer.

Cool slightly then stir  syrup.

Pack mixture in olds or leave in bowl and crumble sugar when it has cooled completely.

Can be used sprinkled over pancakes - pudding - hot rice

Pasta with Artichokes


Recipe for pasta with artichokes, capers and tomatoes.

2 T. onions chopped
2 T. minced garlic
2 T. olive oil
28 oz. can plain tomatoes
6 oz. chopped marinated artichoke hearts
3 T. capers drained
3 T. fresh parsley minced
3/4 C. chicken broth
1/3 C. sour cream
1 C. half and half
1 t. each basil and oregano
1/2 t. ground coriander
Cook onion and garlic in olive oil til softened.
Add tomatoes and juice, simmer 5 mins.
Add artichokes and capers, simmer 5 mins.
Add herbs and broth, bring to boil. Boil 5 mins.
Add sour cream and half and half, simmer 10-15 mins until slightly thickened.
Serve over capellini (very thin spaghetti) or other pasta. Parmesan to taste.

Squash Pickles

Recipe for Squash Pickles:

4 qts. squash
6 sliced onions
2 green peppers
2 red peppers
2 cloves garlic
2 tablespoons salt

5 C. sugar
1 1/2 tsp tumeric
2 tbsp mustard
1 1/2 tsp celery salt
1 1/2 C. vinegar
1/2 C. water

Combine second list, pour over squash and bring to a boil

Blonde Brownies

Recipe for "Blonde Brownies" -

2 c. flour
1/4 teas. baking soda
1 teas baking powder
1 teas salt
2 c. packed brown sugar
2/3 c.. shortening, melted
2 eggs
2 teas vanilla
2 c. choc. chips
1/3 c. chopped nuts

Mix flour, soda, baking powder and salt

Add sugar to shortening - eggs - vanilla

Add flour mixture to sugar mizture

Spread in 13 x 9 pan. Sprinkle with chips and nuts

Bake 350° for 30 mins

Cool in pan; cut in bars

Tea Cake

Recipe for Tea Cake:

2 eggs - then add
1 cup sugar
1/2 cup shortening

-cream together

4 tbl molasses
1 teasp each of cinnamon and cloves
2 cups flour

-mix together thouroughly then add cup of boiling water
1 teasp soda

Bake 35 minutes

Johnny Appleseed Bars

Recipe for "Johnny Appleseed Bars" -

1 c flour
1/2 tsp salt
1 tsp soda
1 tsp cinnamon
1 1/2 c oats
2/3 c brown sugar (packed)
1/2 c oil
1 egg
1 tsp vanilla

Mix together and press half of dough in 9" square pan

Sprinkle with 1 c nuts 2 c thin sliced apples

Spread rest of dough over nuts and apples, press down with pancake turner and smooth top

Bake 350 degrees - 25 min.

Cool and sift conf. sugar

Cut in bars

Rice Dainty




Recipe for "Rice Dainty (pudding)" -

3/4 c. cooked rice
3/4 c. fruit - chopped
1/2 c. honey
3/4 c. cream - whipped

Mix rice, fruit + honey.

Fold in whipped cream + chill well.
